Base Mem

I am a junior colourist with my first series, working on the davince classic.
I am unsure about base mem, and when to adjust.  The show is block shooting,
switching film stocks, indoor and outdoor exposures and using several filters
within a day's shoot.  Sometimes I get a grey card at top of scene, often not.
What is the best way to determine a base mem?  For the entire day, scene, or
whole session?  I"m in the habit of keeping the corrections on a continuous
list for easy reference, should I keep changing my base mem?
